Weekend Recap – Lots of Good Food, Spinning+Yoga, and Seafood Pasta Recipe

Good Monday afternoon, friends (I hope it is good for you)!

I have had a wonderful weekend with my husband (no kids this weekend) – a lot of pool and sun time, good food and exercise.

It feels so good to be back to my routine! My leg is almost completely healed, so I did my Saturday double this weekend! I tried to take it easy (especially in my spinning class), but somehow I still managed to burn my usual calories and do the usual distance almost during that one. Must be because it was Robin’s class and she ROCKS!

Spinning and yoga did make my knee feel better. This morning I went in for my blood test and some time this week my doctor should have the report from Radiology on my X-Rays, but to me this whole thing feels like a pulled muscle…We’ll see, I might just be in denial 🙂

After my Saturday double was done and over with, I got home and made myself a smoothie for lunch.

What’s in the smoothie: 1 frozen banana, 1 cup blueberries, 1/2 cup almond milk, 1 tbsp honey, 1 tbsp walnuts.

Dinner on Saturday night was mostly prepared by husband (grilled chicken) – I just threw together some Orzo Salad:

Right after dinner we went to the pool where we spent most of the evening!

On Sunday morning, hubby and I went out for breakfast to one of our most favorite breakfast places – Kimberly’s Cafe. We love this place! It is simple food, simple interior, very homey and nice. I had their Egg, bacon and cheese sandwich on a croissant that comes with a fruit cup on the side.

We went for a nice walk after breakfast – it wasn’t too hot yet, so we wandered around the streets of Carlisle for a bit to “walk off” our big breakfast.

After our Sunday afternoon pool time we returned home refreshed and cooled down, so I thought it was time to make some dinner. I really felt like making something complicated and requiring a lot of time and effort to make (which doesn’t happen very often to me).

The recipe below is not hard to make. However, if you follow it precisely, it can be very time consuming. You can make the prep time shorter by substituting the ingredients (for example, raw crab I used with precooked and packaged crab meat) – whatever works best for you.

So here we go:

Seafood Pasta Recipe

Seafood Pasta Recipe

Ingredients

  • Crab legs (or crab meat)
  • Fish (any kind)
  • 1 can Smoked oysters
  • Raw shrimp
  • 2 cloves Garlic
  • 5-7 Fresh basil leaves
  • Pasta (any kind)
  • 1/2 cup white wine
  • Lemon zest
  • Butter
  • Olive oil
  • Salt and Pepper

Instructions

  1. Put crab in a pot with water, bring to boil, reduce heat and boil for 5-10 minutes (depending on how frozen it is).
  2. When ready, drain and separate the meat.Set aside.
  3. Melt butter and olive oil in a pan.
  4. Season the fish with salt, pepper and lemon zest.
  5. Fry the fish on both sides until golden brown, place on a plate covered with paper towel to absorb the excess butter/oil. Set aside.
  6. Dice the garlic, add to the pan with oil and butter.
  7. Peel the shrimp and add to the pan.
  8. Fry on one side, turn over and add wine to the pan.
  9. Shrimp takes just a couple minutes to cook. When it is done, leave it on the pan with butter and oil.
  10. Cook pasta according to package instructions. Add some olive oil to the water while cooking it. Drain and set aside.
  11. Cut up some fresh basil leaves and set aside.
  12. Open a can on smoked oysters and set aside.
  13. Combine all the prepared ingredients in a big pot and toss together:
  14. Serve hot with some Parmesan cheese on top.

  2. Too busy with running, Crossfit, work, volunteering, cooking and gardening, ha ha))) Was working on some tan in my backyard though, it`s so cool to be able to just get some sun outside your door, never had this before 🙂
