Hey-hey, my foodies! How was that looooong weekend?

Mine wasn’t that much fun – spent it alone as hubby was travelling and is coming back tonight.

On the other hand though that gave me a chance to do things I’ve been putting away due to lack of time/motivation. Was kind of force to do them out of my boredom.

I feel like I’m finally back to my normal self after all the travels, adjustments and re-adjustments and all that jazz. So, here’s to being back to normal. Which means, of course, that Tasty Tuesdays are back 🙂

So the past two weeks brought my skills of making a super quick and easy dinner to a whole new level. Nobody wants to cook a sophisticated meal when you’re dragging, right? 🙂 Neither did I.

So I came up with this super easy and quick recipe for Ziploc Bag Marinated Chicken Legs.

How about that?

This recipe is calling for mayo. You can easily use store bought mayo, but I make my own so I used that.

Make your own mayo! It’s super easy and you’re not going to believe how tasty it is.

The recipe below is Whole30 compliant and clean. It does take about an hour to cook, but that’s the time in the oven – you can go about your notmal business while it’s cooking. Easy!

Ziploc Bag Marinated Chicken Legs Recipe

Ingredients
  • 12 chicken legs or an equivalent amount of other chicken meat
  • 1 medium onion, diced
  • 3 cloves garlic, crushed
  • 1 cup mayo (home made or store bought)
  • 1 tbsp. dried basil leaves
  • Salt and pepper to taste
  • 1 Gal. Ziploc bag
Instructions
  1. Put chicken legs in Ziploc bag.
  2. Add onion, garlic, mayo, basil and pepper.
  3. Lock the bag and mix the contents well until the chicken is coated.
  4. Leave in the fridge for 8-24 hours. If you get a chance flip the bag over ever few hours.
  5. When ready to cook, preheat oven to 325F.
  6. Put the chicken legs into a greased 9x13 pan.
  7. Pour the leftover marinade on top. THEN add salt and mix well in the pan.
  8. Stick them in the oven and go about your normal household business.
  9. Bake for 60 minutes.
  10. Turn the broiler on for the last 3-5 minutes of baking time.
  11. Serve hot.
