Crockpot Chili Recipe and Tasty Tuesday Linkup Party #39

Hey guys! Happy Tasty Tuesday 🙂 It’s Linkup Party time on Lean Lena.

I feel like it’s getting colder by the minute outside! This time of year I am craving soups. You? 🙂

Soup is just about the easiest thing you can cook, in my opinion. Anybody can make soup.

With the invention of crockpots that easy task is even easier to accomplish. What can be better than coming home to a bowl of warm soup? Almost nothing other than someone to share it with.

So, here’s what’s been cooking in my kitchen all day yesterday and made yummy Monday night dinner:

Easy Crockpot Chili Recipe

INGRIDIENTS:

  • 2 lb ground beef or other meat of your choice
  • 1 large yellow onion, chopped
  • 2 tbsp. olive oil
  • 2 big cloves garlic, minced
  • 2 (14.5 oz) cans diced tomatoes or tomato paste
  • 1 cup chicken/beef broth (I used leftover broth from crockpot chicken I made the week before)
  • 1 package (16 oz) Light Red Kidney Beans . I never use canned beans for my chili. Dried beans taste so much better! Soak them in water over night and they’ll be ready to go into crockpot in the morning.
  • 2 tsp chili powder
  • 1 tsp brown sugar
  • 2 tsp ground cumin
  • 2 tsp paprika
  • Salt and pepper to taste

INSTRUCTIONS:

  1. Heat olive oil in a skillet, add chopped onion and sauté for couple minutes.
  2. Add garlic and sauté for about 30 seconds.
  3. Transfer the mixture into crock pot.
  4. Add beef to the skillet, add chili powder, sugar, cumin, paprika, salt and pepper and brown the beef.
  5. Transfer beef to crockpot, add tomatoes/tomato paste, chicken broth and beans.
  6. Cook on low for 8-10 hours.
  7. Serve warm with shredded cheese, avocado and sour cream.
  8. Devour!

  4. Even though I’m still doing paleo most of the time, chili is one of the few meals that I keep on rotation. I’ve tried alternatives, but sometimes, I just want the beans 🙂 I definitely agree about the dried beans! I always use dried – they’re still pretty easy, but so much tastier!
