Pork Stew Recipe (Crockpot)

Today is Tuesday, and it means what? Yep, that’s right! It means you’re getting a new recipe for your recipe box from me, AND get to link up your food related posts on this blog post for everyone to read, like, share and comment on 🙂

So, I’m going to start with the important things this time. Guess what’s been cooking in my kitchen and what I’m sharing with you today?

I’m always trying to think of ways to simplify my life 🙂 If I can save myself some time on cooking and spend it with the family – I will. Having this recipe in my recipe box gives me just that – HUGE time saver and a healthy simple meal to my family – no compromises there! As always with the crockpot it is simple – load it up, turn it on, leave for work, come back to the hot dinner elves made for you while you were at work 🙂

Here’s a super easy and delicious Pork Stew Recipe I’m talking about:

INGREDIENTS:

  • 6 ea Pork spare ribs
  • 3-4 medium size potatoes
  • A handful of baby carrots
  • Leaks
  • 2 stalks celery
  • 2 bell peppers
  • 2 cloves garlic
  • 2 cups water
  • Olive oil + spray
  • Paprika
  • Salt and white pepper to taste

INSTRUCTIONS:

  1. Cut the vegetables into big chinks/cubes.
  2. Add to a big bowl, add salt, white pepper and 2-3 tbsp. olive oil. Mix until veggies are well coated, set aside.
  3. Spray the crockpot with olive oil spray.
  4. Layer the ribs on the bottom of the crockpot, sprinkle with paprika, salt and pepper.
  5. Add vegetables on top of the ribs.
  6. Add water.
  7. Cook for 8-10 hours on “Low”.
  8. Serve with sour cream/cheese/avocado on top.

  1. Lena, your recipes are always so intriguing to me, cause it’s something I haven’t tried! Pork Ribs? I have NO experience cooking with pork…it kind of scares me a bit, since it’s not a tried and true IBS friendly meat that I typically eat, would love your take on its nutritional content/fat content.

    • Hey Amber. I don’t think I’m qualified enough to give nutrition advice 🙂 I’ll tell you this much – I LOVE pork, especially cooked in a crockpot. It just falls apart and is super delicious. Also, you can easily swap pork in this recipe with beef, chicken or any other type of meat you like 🙂

  6. I am in love with our crockpot and always find a way to use it for anything, even if it’s not really “supposed” to be a crockpot dish. This looks great! I’ll have to try it out!
