Grilled Pork Avocado Salad

Serves: 2 servings
- 2 cups salad greens
- ¼ orange bell pepper, sliced
- ½ medium pork chop, grilled and cubed
- 2 tbsp. purple onions diced
- 10 cherry tomatoes, halved
- 1 roasted parsnips, sliced (optional or substitute with any other roasted vegetable)
- 1 avocado, peeled and cubed
- 1 lemon, juiced
- Wash and dry salad greens and put a layer on the bottom of the salad bowls.
- Add all other ingredients on top in the order listed on the ingredient list.
- Sprinkle with lemon juice and serve as a side or as a dinner salad.
