Raspberry-Peach Cobbler

- ¼ cup butter, softened
- ½ cup (or less) sugar
- 1 cup flour
- 2 tsp. baking powder
- ¼ tsp. salt
- ½ cup milk
- 2 cups fresh raspberries
- ½ medium peach, sliced
- 1 cup orange juice
- Preheat oven to 375F.
- Mix sugar and butter until well combined and smooth.
- Combine flour, baking powder and salt, mix well.
- Combine butter mixture with dry ingredients mix and milk. Mix well.
- Grease a 8"x8" pan and pour the batter into it. Distribute evenly.
- Layer peach slices and berries on top of the batter, sprinkle with sugar if desired.
- Pour orange juice over berries.
- Bake for 35-45 minutes.
- Serve warm or cold with or without a scoop of ice cream.
