Homemade Fresh Vegetables Salad Recipe and Tasty Tuesday Linkup Party

Hey-hey, my friends! I’m finally back from the sunny San Diego! I bet you can’t wait for a recap of my trip πŸ™‚ But I’ll have to save that for a little later in the week.

Why? Because today is the Tasty Tuesday, of course!

Today is going to be a quick, easy and basic recipe for a homemade fresh vegetablesΒ salad!

Homemade salad is my “go-to” lunch – I eat it pretty much every day. You can use this recipe and play with it based on what you like or what you have in your fridge at that moment.

Homemade Fresh Vegetables Salad

INGREDIENTS:

(per 1 serving)

  • 1 cup (packed) fresh baby spinach
  • 1/2 cup (packed) bok choy greens
  • 2 tbsp. pepitas, roasted
  • 1/2 avocado, peeled and cubed
  • 1/4 medium cucumber, peeled and cubed
  • 1 cup fresh tomatoes (I used both cherry tomatoes (halved) and medium tomatoes (coarsely chopped))
  • 1/2 fresh zucchini, noodlized πŸ™‚
  • 1/2 green bell pepper, sliced
  • Olive oil, salt and pepper to taste for the dressing

INSTRUCTIONS:

Prepare all the veggies (peel, chop, noodlize)

Layer your salad bowl/lunch container with baby spinach and bok choy greens.

Top with the rest of the veggies on the list.

Before serving: sprinkle roasted pepitas on top, add olive oil, salt and pepper to taste.

Enjoy!

Tweak this recipe to your liking – substitute the ingredients with pretty much any vegetable you like/have at hand.

And that’s your nutrient and vitamin boost for the day, guys!
