Today I wanted to share one of my new favorite recipes with you.

Grilled Pork Avocado Salad

We grill a lot. And we also grill A LOT – so we often have leftovers, and that’s by design. With 3 working people in the house we not only need 4 dinners, but 3 lunches to pack. Leftovers make perfect lunches.

So, if you grilled pork chops yesterday and have leftovers – go ahead and use them for this saladΒ – I promise you won’t be disappointed.

You will only need a few simple ingredients to throw this salad together and it will take just minutes for you to make it.

Grilled Pork Avocado Salad

Serves: 2 servings
 
Ingredients
  • 2 cups salad greens
  • ¼ orange bell pepper, sliced
  • ½ medium pork chop, grilled and cubed
  • 2 tbsp. purple onions diced
  • 10 cherry tomatoes, halved
  • 1 roasted parsnips, sliced (optional or substitute with any other roasted vegetable)
  • 1 avocado, peeled and cubed
  • 1 lemon, juiced
Instructions
  1. Wash and dry salad greens and put a layer on the bottom of the salad bowls.
  2. Add all other ingredients on top in the order listed on the ingredient list.
  3. Sprinkle with lemon juice and serve as a side or as a dinner salad.
