One Pot Pasta with Shrimp Recipe

So after all that holiday cooking and over-the-stove-slaving I didn’t feel like cooking at all last night.

We still had leftover salmon and mashed potatoes and we almost settled for that as our dinner.

And then my consciousness spoke to me, I lifted my butt off the couch and went to the kitchen. 🙂

But before I did that, I did some Pinterest searching for a nice and easy recipe that I could use/adopt based on what I had in the fridge. I searched for one pot pasta recipes with shrimp (because I had never tried making a one pot pasta before and I had a pack of shrimp in the freezer). I found this awesome recipe for One-Pan Coconut Shrimp Noodle Bowls by Bev Cooks. I didn’t have all the ingredients the original recipe was calling for, so I made my own with what I had on hand. I present to you my twist on Bev’s recipe:

Coconut Shrimp One Pot Pasta

YOU WILL NEED:

  • 3 Tbs. extra-virgin olive oil, divided 2+1
  • 1 lb shrimp; thawed, peeled and deveined
  • 2 cloves garlic, minced
  • 1 Tbs. fresh grated ginger
  • 1 (13.5 oz) can coconut milk
  • 2 cups stock (fish, chicken, vegetable or whatever you have. I used chicken stock)
  • Half a box whole grain angel hair pasta (or any pasta/noodles you have on hand)
  • 1 tbsp. Cholula sauce
  • 1/2 cup chopped fresh cilantro leaves (plus more for garnish)
  • 1/2 medium yellow onion, diced
  • Juice of 1 lemon
  • Salt and pepper to taste

INSTRUCTIONS:

  1. Heat 1 tbsp. olive oil in a big pot. Add garlic, onion and ginger and sauté for 1 minute until fragrant. Make sure to constantly stir it otherwise ginger sticks to the bottom.
  2. Add coconut milk, half the cilantro, Cholula sauce and stock to the pot and bring to boil.
  3. Lower the heat and add noodles. Cook according to package instructions (mine took about 8 minutes).
  4. While noodles are cooking, heat 2 tbsp. olive oil in a pan, add shrimp and season with salt and pepper. Cook for just a couple minutes until shrimp turns light pink on both sides. The idea here is to just cook the shrimp enough – don’t overcook it or it will be chewy. You will add it to the pot of hot pasta at the end and it will finish cooking there.
  5. When the noodles are done, add cooked shrimp to the pot with noodles, add lemon juice and remaining cilantro (save a few leaves for garnish).
  6. Let the pasta and shrimp sit together in a pot for about 5-7 minutes allowing the flavors to blend, then serve with some grated Parmesan on top and garlic bread on the side.

I am absolutely in love with one pot pasta. So quick and easy to make and the pasta tastes so much better when you actually cook it in the sauce.
