Pasta Salad Recipe, healthy breakfast idea and more

I hope you had an easy Friday and are enjoying your weekend!

My Friday was long and I wished I took it off rather than going to work. But hey, it is weekend now!

So on Friday I woke up at my usual 6:20 am, snoozed my alarm and got up at 6:30 am. Hey, it works for me and I know there are thousands of “snoozers” out there. 🙂

I wasn’t really feeling like making myself breakfast…I have to confess – those muffins and cupcakes in the fridge were seriously calling my name 🙂 But I resisted. Instead, I had some leftover hard boiled eggs (with some light mayo on top) and a hot dog sausage.

That was quick and delicious!

For lunch I had leftover pasta salad from the night before, and I would love to share the recipe for it with you today. It is EXTREMELY easy to make (and that is what I love about pasta salads). So here we go.

Florentine Pasta Salad

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Florentine Pasta Salad

Ingredients

  • 1 package pasta (I used Barilla Tri-Color Rotini)
  • 1/2 cup black pitted olives
  • 1/2 cup purple onion
  • 1 cup fresh basil
  • 3 oz hard salami
  • 3 oz pastrami
  • 1 tbsp capers
  • 1/2 cup crumbled Feta cheese
  • Juice of 1/2 lemon
  • 1/2 cup olive oil
  • Salt & pepper

Instructions

  1. Cook pasta according to package instructions, drain, let cool down.
  2. Dice and mix in the salad bowl: onion, fresh basil, olives (rings), salami and pastrami.
  3. Add capers to the mix.
  4. Mix olive oil, lemon juice, salt and pepper in a bowl until blended well.
  5. Add pasta and Feta cheese to the bowl.
  6. Pour oil and lemon juice mix over.
  7. Mix well.

On an unrelated subject:

My Gaiam Oregon Scientific sports watch has a feature of showing the total number of calories burnt. So I wasn’t resetting the counter ever since I got the watch in March. Here’s what I got so far:

This is not counting my yoga classes since I normally don’t have my watch on for those.

Rough calculations: 14 488 calories/500 cal per spin class = 29 spin classes! That’s about 2 spin classes a week since March!
