Saturday: fruit salad+vitamin water+”A-las-Greek” salad recipes

Happy weekend, friends!

It is a windy but gorgeous day here in PA. Still way too cold for going swimming!

Saturday morning I woke up bright and early (Me? Bright and early? I know, right.) and went for my spinning class with Gretchen. I have told you already that Gretchen is a great instructor! It was a very good workout, I “rode” a good number of miles and burnt some serious calories in her class. It was sad though because it was her last class here at the Y and I am really going to miss her.

Here’s today’s workout “round-up”:

After that it was time for some healthy delicious breakfast and I made myself a fruit salad with what I had in the fridge (as always):

  • Melon (cubes) – 1 cup
  • Strawberries (fresh) – 5 ea
  • Cottage cheese – 1/2 cup
  • Blueberries – 1 tbs
  • Almonds – 1 tbs
  • Home made frozen strawberry mix (basically just mashed strawberries and some sugar, put in a plastic container and frozen)

My husband was working on our new patio most of the day yesterday so I had my “play time” in the kitchen and made some vitamin water:

Just cut up some fresh strawberries (did I mention I have a bunch in my fridge?), through in 5-6 fresh/frozen mint leaves and let it sit in the fridge for a few hours.

Dinner side was on me last night so I made this “A-las-Greek” salad to go with pork loin my husband grilled:

Good thing about it is – just eyeball the ingredients, no precise measurements necessary:

  • Lettuce
  • Baby spinach
  • Fresh cucumbers (skin on)
  • Avocado
  • Black olives
  • Grape tomatoes
  • Purple onion
  • Feta cheese
  • Chopped walnuts
