Good morning, good morning!
Have you had breakfast yet? No? I got a quick and easy to make breakfast recipeΒ for you today – Breakfast Quesadillas!
As always, this recipe is very flexible – feel free to switch up the ingredients based on your preferences and availability π
These breakfast quesadillas have been my “go to” breakfast for a while now. I love me that crispy quesadilla filled with goodness! I promise you, they take 5 minutes to make. No advance prep or much chopping involved either.
Are you ready to have the BEST breakfast you’ve had in a loooong time? π Then read on!
Breakfast Quesadillas
YOU WILL NEED:
- 1 tortilla (I used large spinach tortillas)
- 1/2 avocado (peeled and sliced)Β or 4 tbsp. guacamole
- 1 medium bella mushroom, sliced
- 4-6 pieces of meat (I used leftover lamb, but any kind of meat will work here)
- 1 leaf Bok Choy (the green part), torn into medium pieces. Baby spinach will work here just as well.
- Salt and pepper to taste
HOW TO:
- Put the tortilla into a hot pan. The pan can be the size of the tortilla you have or smaller – as long as one half of the tortilla is in the pan, it’ll work.
- Spread the guacamole over half of the tortilla while it’s in the pan (or spread the avocado slices evenly over half of the tortilla).
- Put meat and mushroom slices over avocado/guacamole and season with salt and pepper.
- Top with the Bok Choy leave pieces.
- Fold the other end of the tortilla over the one you just put these ingredients on, and press down with a turner.
- Flip the whole thing over in about a minute and brown on the other side.
- Take it off the pan, cut in half and enjoy!
As you can see, the beauty of these breakfast quesadillas is that you can pretty much swap any ingredient in them based on your preferences π Just don’t swap out those tortillas – they are super crispy after being in that pan for a couple minutes. YUM!

How is it a quesadilla without cheese?? I don’t speak Spanish, but I do know that queso means cheese. I’d use cheese and/or egg instead of the meat. But this does sound delicious–I love avocado and mushrooms!
