How to Make Perfect Fried Rice

Serves: 2 servings
- 3 small mushrooms
- 2 oz asparagus (about 3 stalks)
- 1 oz leeks
- 2-3 oz green zucchini
- ½ cup jasmine rice
- 1 ½ cups water
- 2-3 tbsp unsalted butter
- 3 tbsp olive oil
- Fresh cilantro to garnish
- ½ fresh lime
- Soy sauce and pepper to taste
- Cooking the rice:
- Melt butter in a pan.
- Add rice and stir constantly until it turns white and almost starts popping.
- Add water, reduce heat and simmer covered for about 20 minutes or until the water evaporates.
- While rice is cooking, chop the vegetables.
- Heat olive oil in a wok or a big sauce pan.
- Add vegetables to oil and cook for 2-3 minutes.
- Add rice, sprinkle soy sauce and pepper on top and cook for another minute stirring constantly.
- Serve with cilantro and ¼ lime.
