How to Make Perfect Fried Rice

Ingredients
  • 3 small mushrooms
  • 2 oz asparagus (about 3 stalks)
  • 1 oz leeks
  • 2-3 oz green zucchini
  • ½ cup jasmine rice
  • 1 ½ cups water
  • 2-3 tbsp unsalted butter
  • 3 tbsp olive oil
  • Fresh cilantro to garnish
  • ½ fresh lime
  • Soy sauce and pepper to taste
Instructions
  1. Cooking the rice:
  2. Melt butter in a pan.
  3. Add rice and stir constantly until it turns white and almost starts popping.
  4. Add water, reduce heat and simmer covered for about 20 minutes or until the water evaporates.
  5. While rice is cooking, chop the vegetables.
  6. Heat olive oil in a wok or a big sauce pan.
  7. Add vegetables to oil and cook for 2-3 minutes.
  8. Add rice, sprinkle soy sauce and pepper on top and cook for another minute stirring constantly.
  9. Serve with cilantro and ¼ lime.
