Foods of the Week – What’s on my Plate Wednesday

Hello and happy Wednesday to you, my friends!

Let’s talk healthy (and not so much) food, shall we? I am changing the format of my weekly “What’s on my Plate Wednesday” blog post today – just because I get bored if things don’t change for a while 🙂

Hope you like it!

So….let’s see. Last week’s foods were quite a mix – from healthy to not so much, from sweet to sour and savory…a little bit of everything. The hardest part of it was that I had 2 social events last weekend – Carlisle Harvest of the Arts Festival (i.e. food fest) and my company picnic. The easiest part last week was that my husband was gone on business for the week, the kids were with their mom, and I could cook whatever I wanted for myself!

So here we go – eating highlights of the past week.

I bought a whole bunch of fruit last week, so a lot of morning meals had fruit in them.

Like this Saturday morning pre-workout breakfast:

Oatmeal, fresh strawberries and chocolate chips

Or this breakfast on Sunday morning:

Or quick Friday morning breakfast:

homemade granola, non-fat Greek yogurt, blueberries

Dinners were fun! Usually it is the biggest meal of the day in our family – you know, family of 4, gotta make sure everybody gets enough to eat…

It was a lot of fun to just be able to throw together a salad for dinner last Thursday since it was just for myself:

Couscous, radishes, sweet potatoes, tomatoes, shallots, bell pepper and purple onion; and olive oil+lemon juice as a dressing

Or have a quick and “low-maintenance” meal by throwing pork loin and sweet potatoes in the oven at the same time and enjoy the new Big Bang Theory while it is cooking 🙂

Or go buy a Crock Pot over the weekend, and make a Beef Stew 🙂

Lunches were more challenging…

Especially on Saturday when I had my lunch at the Harvest of the Arts Overeating Festival. This was the healthiest thing I could find to eat there:

Hey, at least I didn’t choose French fries, right? 😉

Then Tuesday at work was quarterly review meeting, and everybody got lunch ordered in.

Got back on track though – by packing dinner leftovers for lunch to work today:

Snacks….snacks were not my friends last week…

But then hubby came back from China and brought me these:

Anywho…It was a fun week! Husband is back home, I got myself a new gadget to play with (crockpot) and experiment in the kitchen, work is busy and workouts are daily 🙂
