My “Food and Fitness Journal” entries for the past couple days – #plankaday challenge continues!

Hello, friends, and happy Friday!

It is almost weekend! Yey!

Here are my “Food Journal” entries for the last couple of days:

Wednesday

Breakfast was an egg sandwich with pastrami, cream cheese and baby lettuce on a piece of whole wheat dark bread:

For lunch my husband made me a sandwich with hard salami, purple onion, baby lettuce and lite mayo:

For dinner we just got some Chinese food because none of us wanted to cook, we were so tired after our work days.

Thursday

For breakfast I made myself a sandwich on a whole wheat bread – cream cheese, banana, blueberries, pine nuts, and honey – with a plum and left over banana on the side.

For lunch I had the leftover Chinese from the night before.

When we got home last night we decided we both wanted something quick, easy and healthy for dinner, so I made pasta salad:

I will post the recipe for this salad a little later today for you to enjoy 🙂

After dinner we went for a walk downtown and ended up in Carlisle Bakery having their wonderful cookies!

On the fitness front:

I was signed up for a spin class on Wednesday, but had to cancel…Instead I hit the gym for some elliptical time. Now that I haven’t done in a while!

It was FUN! I was drenched in sweat when I was done and enjoyed a wonderful yoga class with Jim afterwords.

Yesterday I had a chance to attend a yoga class with Jim at work over the lunch hour! How awesome is that? I am so glad my company does that for us!

Meanwhile, I didn’t forget to do my #plankaday challenge every day. Here are the results for the past couple of days.

Plankaday 5 and 6

And…I got a new badge on Lose it! for going to the pool 12 times in the past month! The badge is called “Pool Shark” 🙂

Laugh a little:

That’s it for now 🙂 I will be back later today with the pasta salad recipe for you, friends.

Stay fit!
