Recipe: Pasta Salad with Roasted Mushrooms

As promised, my friends, here’s the recipe for the last night’s dinner – Pasta Salad with Roasted Mushrooms.

Ingredients:

  • 1/2 package Barilla Whole Grain Penne
  • 6-7 medium bella mushrooms
  • 3 oz pastrami
  • fresh basil leaves
  • 1/2 3 oz package pine nuts
  • 1 ea avocado
  • 1/2 cup crumbled feta cheese
  • Juice of 1 lemon
  • 1/3 cup of olive oil

Instructions:

Cook pasta according to package instructions.

While it is cooking, cut the mushrooms in half, drizzle with olive oil, salt and pepper, and bake in the over for 10-15 minutes at 350F.

Take mushrooms out of the oven and let them cool down.

Brown pine nuts over medium heat on a pan:

Cut up avocado and pastrami and put in a salad bowl.

Cut fresh basil leaves and add to the mix with feta cheese.

Season with salt and paper, mix well.

Add pasta to the bowl.

Combine lemon juice and oil in a bowl, season with salt and pepper, and mix well. Pour over the salad and mix well until pasta is coated with dressing.
