Hey guys! How was your weekend?

We had beautiful weather here in PA this weekend!

Hubby and I ran The Glo Run 5K on Saturday evening shaving 8 minutes off of our previous time for the distance!!! Thanks to my Polar I know that πŸ™‚

Anyway! Back to the Tasty Tuesday business here πŸ™‚

As you guys know, we started another Whole30 last Monday – the second for me and the very first one for my husband.

There are literally thousands of posts out there with recipes and meal plans for Whole30 week 1, but I’m just going to tell you what our Whole30 Week 1 was like this time around,Β and show you some fun things we ate, how it felt and what I prepped for Week 2. Here we go πŸ™‚

Who would have thought roasted radishes were so GOOD? They taste amazing when paired with roasted carrots.

Who would have thought a simple basil pesto can transform your grilled vegetables into something you can’t get enough of? (skip the cheese in the recipe I linked above to make it Whole30 compliant).

These roasted potatoes blew my family away. Yes, potatoes are now compliant. Doesn’t mean we eat them every day, but we enjoy them occasionally.

So week 2 is upon us and I made some discoveries in our Whole 30 Week 1 that I used to food prep for Week 2 this weekend.

{Eggs don’t Have to be Boring}

A lot of Whole30 breakfasts around the world contain eggs πŸ™‚ That’s just naturally what happens when you tell people they can’t have their PBJ sandwich for breakfast – they turn to eggs. Time after time. Day after day…until theyΒ get sick of thoseΒ hard boiled eggs for life.

But you know what? Eating eggs for breakfast doesn’t have to be boring! This weekend I made these Eggs in a Nest of sweet potatoes and apples with bacon sprinkled on top. HOLLY YUM!

{Food Prep Revelation}

You can stuff peppers and freeze them. All you have to do to make dinner thenΒ is stick them in your crockpot in the morning. BAM! That’s food prep on a whole new level!

{Food Prep Champion}

These guys were supper popular in Whole30 Week 1 in my house – and not just among those actually doing the Whole30! So this week I made two batches and froze one after cooking.

That was on Saturday morning. Guess what I had to pull out of my freezer on Sunday night because we were almost out? Yep, these little guys. They are that good πŸ™‚

So, overall, Whole30 Week 1 felt great! For both of us.

Better mood, better energy level, better digestion, better days, guys!

So bring on Week 2! We’re ready!

  1. I love how you are doing Whole 30, but aren’t an “elitist” about it. Some people who choose to do Whole 30/Paleo, make it seem as if what they are doing makes them “better/superior” than others, cause they say no to ketchup and donuts and bread, but in actuality I find it rather annoying when people have that attitude cause I’m over here like I WISH I COULD EAT DONUTS AND BREAD. All your eats look delish, I never knew about freezing peppers, I’ve yet to make stuffed peppers again, I’m so weird about food mixing/touching…

    • Amber, that’s just stupidity, seriously. How eating/not eating something can make anyone superior to others? πŸ™‚ Actually, I think there are very few things in life that actually make people superior to others. Like, very-very-very few. I don’t believe I’ve mastered any of them just yet πŸ™‚

  7. I think it’s great your husband is loving the Whole 30! I don’t know how mine would do – he kinda lives for Cheetos. I’ve thought about it but …. I don’t know how I would do with working out, etc. I could totally see me eating roasted potatoes like an apple just to get my carbs in. Haha! Oh, and there’s the whole “I’m not a big fan of egg yolks” business. That would make breakfast interesting, to say the least. πŸ™‚

    • Well, my husband is generally not a 100% healthy eater. Neither am I really – I really like my ice cream and chocolate πŸ™‚ He loves his BP. πŸ™‚ But this time I’m just amazed by his determination and will power. He’s doing so well with this.
      You’d do fine, too – you could eat sweet potatoes – they are a whole30 staple πŸ™‚

    • You’re most welcome, Love.
      They are super easy to make: spices + olive oil: coat the potatoes, roast for 40 minutes at 400F (turn halfway) and done πŸ™‚
      I hope you enjoy them if you decide to make them πŸ™‚
