Black beans, avocado and olives salad recipe

Tonight was a “create your own salad” night in my kitchen. While husband was grilling away (boneless, skinless chicken thighs), I put together this salad. So, here we go, recipe below. Enjoy!

Black beans, avocado and olives salad

Ingredients

  • Lettuce (any kind)
  • Fresh baby spinach
  • Black beans
  • Chopped walnuts
  • Feta cheese (crumbled)
  • Yellow or purple onion
  • Black pitted olives
  • Cucumber
  • Avocado

Instructions

  1. Form the base in your salad base with chopped lettuce and whole baby spinach leaves
  2. Slice cucumbers, avocado and onion and place on top of the base
  3. Add rinsed and drained black beans and olives
  4. Top with crumbled feta cheese and chopped walnuts and enjoy with your dressing of choice!
