Black Beans and Mango Salad Recipe

Hello, friends!

I hope your week is going well so far and you’re all ready for a new salad recipe to go on your menu 🙂

As always I am just throwing stuff I have in my fridge together in a salad bowl, so here you go!

Black Beans and Mango Salad

Black Beans and Mango Salad

Ingredients

  • 1/2 mango
  • 1/2 can of black beans
  • Green onions
  • Lettuce (any kind you like)
  • Fresh baby spinach
  • Walnuts
  • Crumbled feta cheese
  • Cucumber
  • Salt and pepper.
  • Dressing of your choice (I just use a little bit of olive oil)

Instructions

  1. Mix lettuce and spinach in a bowl.
  2. Cut up the onions, mango and cucumber, put on top of the lettuce/spinach bed.
  3. Rinse and drain black beans and add to the mix.
  4. Add crumbled feta cheese (or any other kind of cheese you like) on top.
  5. Chop up the walnuts and spread on top.
  6. Season with salt and paper and the dressing of your choice.

I made this salad as a side for BBQ chicken wings we had last night and enjoyed the leftovers for lunch today.

  1. Sounds good except I think I would omit the mango! I am not a fan of sweet and savory in the same dish! Everything else sounds amazing though!
