Weekend Round-Up: grilled vegetables recipe, Saturday spinning, and lots of pool time

Hello, friends!

I hope you had a wonderful weekend. Mine was hectic, busy but a lot of fun!

It started with a “weekly Saturday double” – spinning and yoga at the Y. This time my favorite instructor (Jim) was teaching both spinning and yoga, and my hubby decided to come to the spinning class with me (how awesome is that?)!

Here’s the class results (sorry for the weird angle of the picture – the light was terrible):

After the spinning class my hubby went home and I stayed for a wonderful yoga class with Jim.

When I was done with my weekly double, I went home for a delicious and healthy lunch:

  •  Whole wheat bread
  • Turkey breast
  • Baby spinach
  • Fresh strawberries
  • Watermelon cubes

After lunch we headed out! It was baking hot outside, but we were determined to do what we had planned, and that was – going to Foundry Day in Boiling Springs, PA and over to Lurgan Greenhouse to get some flowers for our porch and new patio.

Foundry Day was a little underwhelming (in terms of arts and crafts) to be honest…Other than seeing the beautiful Boiling Springs lake that I really like, coming over to Jim’s booth for the Rail Trail and having a delicious mango smoothie it wasn’t much fun for me. Maybe it was the heat…

Right after that we headed over to Amish Greenhouse here in the area that we go to every year to get flowers and veggies for our garden. That part was fun! I have never head a green thumb, but I enjoy planning out the flower arrangements etc. When we got back home, I just couldn’t wait to start planting! So I did.

Here’s the mess I made out on the porch:

Sunday was even better than Saturday! Since it was so hot outside, we decided to spend the day by the pool at the Carlisle Swim Club:

It was a beautiful day for it! We had so much fun swimming, laying in the sun and just enjoying ourselves.

Carmen (!!!) and I shared this delicious salad for lunch:

It had lettuce, grilled chicken breast, a couple of grape tomatoes, and shredded carrots in it. I also got some Golden Italian dressing for it. It was delicious! I bet Carmen would not even touch it if I made it at home, but she ate a good half of it with me by the pool, Go figure!

We went home for a bit to make and have dinner. Hubs made grilled shrimp:

And I put together a vegetable mix for grilling using one of my old friends’ recipes. The great thing about it is – no measurements necessary. Just through in whatever veggies you have in the fridge in whatever quantities 🙂

BBQ Veggies

I used:

  • 1 egg plant
  • 2 small potatoes
  • 1/2 yellow onion
  • 1 orange bell pepper
  • 3 tbs olive oil
  • Salt and pepper

There’s a couple secrets for this recipe:

  • cut up the veggies, add salt, pepper and oil and let it stand for 15-20 minutes. This will make veggies nice and oiled for grilling.
  • grill it slooooooooow, preferably on charcoal, not open fire.
