Hello, friends!
I hope your week is going well so far and you’re all ready for a new salad recipe to go on your menu 🙂
As always I am just throwing stuff I have in my fridge together in a salad bowl, so here you go!
Black Beans and Mango Salad
Ingredients
- 1/2 mango
- 1/2 can of black beans
- Green onions
- Lettuce (any kind you like)
- Fresh baby spinach
- Walnuts
- Crumbled feta cheese
- Cucumber
- Salt and pepper.
- Dressing of your choice (I just use a little bit of olive oil)
Instructions
- Mix lettuce and spinach in a bowl.
- Cut up the onions, mango and cucumber, put on top of the lettuce/spinach bed.
- Rinse and drain black beans and add to the mix.
- Add crumbled feta cheese (or any other kind of cheese you like) on top.
- Chop up the walnuts and spread on top.
- Season with salt and paper and the dressing of your choice.

I made this salad as a side for BBQ chicken wings we had last night and enjoyed the leftovers for lunch today.

Sounds good except I think I would omit the mango! I am not a fan of sweet and savory in the same dish! Everything else sounds amazing though!
