Tonight was a “create your own salad” night in my kitchen. While husband was grilling away (boneless, skinless chicken thighs), I put together this salad. So, here we go, recipe below. Enjoy!
Black beans, avocado and olives salad
Ingredients
- Lettuce (any kind)
- Fresh baby spinach
- Black beans
- Chopped walnuts
- Feta cheese (crumbled)
- Yellow or purple onion
- Black pitted olives
- Cucumber
- Avocado
Instructions
- Form the base in your salad base with chopped lettuce and whole baby spinach leaves
- Slice cucumbers, avocado and onion and place on top of the base
- Add rinsed and drained black beans and olives
- Top with crumbled feta cheese and chopped walnuts and enjoy with your dressing of choice!
