Breakfast in a Glass Recipe, Retro Candy Store Adventures and the 4th of July

Hello, friends!

I hope you had a wonderful 4th of July! I had a great day with my husband at the Swim Club, casual dinner party for 3 people (the 2 of us included) and some good food!

First things first – as promised, here’s the recipe for my Wednesday “Breakfast in a Glass”. This time it is a picture recipe – basically what you do Β is you put the layers in a glass exactly as shown in the picture below.

I made mine the night before – simply because I don’t like my oats crunchy. I put the cottage cheese on top of oats for the same reason – so the oats get softer overnight. Feel free to play around with the layers – it is a lot of fun to experiment with this recipe, and it saves you time in the morning if you prep it the night before.

Wednesday was a short day at work (we finished at 2:00 pm), so I just grabbed a quick healthy lunch at Sheetz (believe it or not, they do have some healthy stuff at Sheetz πŸ™‚ )

Carmen didn’t have to go to her summer camp this week, so she was home when I got back from work on Wednesday. It became our little tradition that whenever we have a week day afternoon together, we go to a local retro candy store –Β Georgie Lou’s. You wouldn’t believe the stuff they have there! I LOVE that store! Check out the pile of candy we got and all for $10:

Usually C and I sit on our “candy bench” not far away from the store and eat the candy we got, but this year they had cute little tables and chairs right outside the store, so we sat there and enjoyed our pile…well, C did mostly – I modestly had a Tootsie Roll Pop, but my girl was seriously biting into “Cow Tales” and York Peppermint Patties.

After most of the candy pile disappeared into C’s little mouth we realized it was Wednesday, which means – Farmers on the Square day! This is a seasonal farmers’ market on one of the squares downtown that is open every Wednesday 3:00 to 7:00 pm. All the farmers live within 50 miles from Carlisle, so it is a truly local market!

Carmen and I got a lot of goodies at the market that day:

When we got back home, Carmen, who is currently obsessed with Instagram, started taking pictures of pretty much everything she saw in the house. Since she doesn’t have a smart phone and can’t post on Instagram from her phone, she used mine. So I ended up having all these hilarious shots on my phone:

On the 4th of July I jumped up at 7 am for some reason and couldn’t go back to sleep. So I made myself breakfast:

Open face sandwich with cream cheese, lean turkey breast, spinach and hard boild egg + some cherries

I spent some time working on my laptop – I was running out of space there so I cleaned it up, backed up my old files, cleaned up my mailbox, etc..

Hubby and I decided to spend the 4th of July at the Swim Club – relaxing, swimming, catching some sun…So while he was sleeping in, then waking up, then having breakfast and paying bills I made myself some lunch:

While we were there we ran into our friend Elise and her son Sam (who is friends with C) and ended up inviting them both over for hot dogs, cup cakes and fireworks party at our house. There was no party planned and prepared, but we had 2 hours until they were coming over, so my hubby straightened up the house a little, while I was making pasta salad.

Sam was too sleepy that night and not even hot dogs, cup cakes and fireworks could get him out of the house so Elise came over alone. We still had a great time! We packed some hot dogs and cupcakes for Elise to take back home to Sam, and invited them over again on Monday night for the fireworks part of the 4th of July.

I will not post the pictures of hot dogs and cupcakes to not test your motivation, guys, but I totally exceeded my calorie budget yesterday! Not by much though – I was working hard on trying to stay within budget and restricting the number of cupcakes going into my mouth πŸ™‚

I hope you guys had a wonderful holiday and managed to stay fit and not give up to the holiday food fest πŸ™‚
