Hello, friends! I hope you are having a wonderful Thursday.
Yesterday morning I woke up with the thought that I should try something new for breakfast (was getting tired of my usual fruit salad).
Since it was still early and I had time, I quickly pulled up a recipe in my memory that I’d found earlier and made this wonderful Breakfast Scramble:

The Breakfast Scramble is extremely easy and quick to make, and a good way to use your bananas that are too ripe and nobody wants to eat them 🙂
So, just combine the following ingredients:
- 1 banana, mashed
- 1 egg
- 2-3 egg whites
- 1 tsp vanilla extract
- 1 tsp honey
- 1 tsp cinnamon
Blend the ingredients well and  cook in a pan like you would scrambled eggs – stir often and cook over medium heat.
I topped mine with blueberries – it was very delicious!
For lunch I had leftover salad our company provided at work on Wednesday – grilled chicken salad with Italian dressing from Napoli Pizza.
I also brought a snack to work yesterday, which I have been absolutely addicted to lately:
Dinner last night was absolutely fabulous! My husband is the King of the Grill. Look what he made:
Introducing: grilled rainbow trout, kebabs with grilled scallops, baby bella mushrooms, yellow onion and grape tomatoes!
For the side I made one of my favorites – Sweet potato, black beans and quinoa  salad.
This pretty much sums up my “wonderful food Wednesday”.
The day ended with a wonderfully relaxing yoga class with Jim – what more to wish for?
