Curried Chicken Egg Salad Recipe

So this weekend I had some hard boiled eggs left over as well as some crock pot chickenΒ from the weekday meals. I hate wasting/throwing away food so I set on the quest of making a curried chicken egg salad. Why curried? Because I LOVE curry π
The beauty of this curried chicken egg salad is that it comes together in minutes and you can eat it as is or make a curried chicken egg salad sandwich with that homemade bread.
My family enjoys just munching on it as a snack even (I know, I know…) π
Put it on a bed of lettuce/kale, throw in some cherry tomatoes and you got yourself a perfect lunch to take to work tomorrow!
- 5 eggs, hard boiled and diced
- 4 cups chicken, cooked and cut in cubes
- ½ cup purple onion, diced
- ½ fresh celery, diced
- 1 tbsp. curry powder (or more)
- Mayo (enough to coat ingredients)
- Salt and pepper to taste
- Dice the chicken and vegetables.
- Combine with spices in a big mixing bowl and mix well.
- Add mayo and mix until all ingredients are coated.

omg. DROOLING, Lena, that chicken/egg salad magic looks phenomenal, I am unsure how I feel about curry, is it spicy? I want to try this, it looks SO creamy, and I am obsessed with creamy…maybe I could do a pumpkin curry spice chicken salad!
