{TWO} Delicious Eats Lately
For the Tasty Tuesday part of today I wanted to share some delicious recipes I’ve tried lately. I’ve been getting tired of our usual menu, you know?
So for weeks, months, and possibly even years I’ve been reading Jennifer say “if you haven’t tried these quinoa breakfast bars, you’re definitely missing out”. Well, in one ear and out the other it went until I decided I should listen to the woman who is wiser than me and knows a thing or two about food.
Now let me tell you, I food prep every weekend, and I just never seem to cook just the right amount of quinoa for salads, I always have leftovers that end up sitting in my fridge until next weekend and end up being pitched. Oh horror! Pitching quinoa!
With this recipe – no more! It is a perfect way to use that cooked quinoa you might have left over.
What I also like about this recipe is that it is flexible. It WILL work if you use goji berries (those have been sitting in my pantry forever) instead of raisins, or the Perfect Snaque mix you have been looking to use up instead of nuts.
These make a perfect breakfast on the go (like my Wednesdays before teaching a 6:45 AM TRX class), or a mid morning snack at work.

Back to my weekend meal prep – I spotted some very over ripe bananas in my fruit basket. What do you do with over ripe bananas? Yep, you make banana bread.
Contrary to the popular belief not all Pinterest recipes’ re-creationsย are bound to fail –ย I went on and found one that I successfully implemented and was quite pleased with the results.
You just look what I made with those over ripe bananas! (all photos in this post are my original photos):

I cannot eat bananas, but I am DROOLING over that recipe! And I eat quinoa every day for dinner, well WITH dinner, not sure if I could part with it for breakfast, since it’s so expensive!

The quinoa bars looks amazing! I have half a jar of uncooked quinoa because it turned out my husband is mildly allergic and won’t eat it. Seems silly to make a batch of it when I’m the only one eating it. These bars seem like a great solution!
