Hey-hey, my friends! I’m finally back from the sunny San Diego! I bet you can’t wait for a recap of my trip π But I’ll have to save that for a little later in the week.
Why? Because today is the Tasty Tuesday, of course!
Every Tuesday I post a recipe, a collection of recipes, a restaurant review or anything related to food. There is then a linkup at the end of the post where you can add links to your food-related blog posts! The linkup stays open for a week β right until the next one comes around. How awesome is that?
Donβt forget to check out other link up participants and thereβs only one rule to the linkup – link back to this blog or grab the link up badge from the sidebar. Letβs spread the word so we can have more people checking out your posts next week!
We also now have the Tasty Tuesday Pinterest Board where you can pin your posts every week. To be able to do that, please follow me on Pinterest and let me know in comments that you did, and your Pinterest username so I could send you an invite.
So! On to the tasty stuff now
Today is going to be a quick, easy and basic recipe for a homemade fresh vegetablesΒ salad!
Homemade salad is my “go-to” lunch – I eat it pretty much every day. You can use this recipe and play with it based on what you like or what you have in your fridge at that moment.
Homemade Fresh Vegetables Salad
INGREDIENTS:
(per 1 serving)
- 1 cup (packed) fresh baby spinach
- 1/2 cup (packed) bok choy greens
- 2 tbsp. pepitas, roasted
- 1/2 avocado, peeled and cubed
- 1/4 medium cucumber, peeled and cubed
- 1 cup fresh tomatoes (I used both cherry tomatoes (halved) and medium tomatoes (coarsely chopped))
- 1/2 fresh zucchini, noodlized π
- 1/2 green bell pepper, sliced
- Olive oil, salt and pepper to taste for the dressing
INSTRUCTIONS:
Prepare all the veggies (peel, chop, noodlize)
Layer your salad bowl/lunch container with baby spinach and bok choy greens.
Top with the rest of the veggies on the list.
Before serving: sprinkle roasted pepitas on top, add olive oil, salt and pepper to taste.
Enjoy!
Tweak this recipe to your liking – substitute the ingredients with pretty much any vegetable you like/have at hand.
And that’s your nutrient and vitamin boost for the day, guys!
Spread the love and link ’em up below.
