Fun Foods Friday: Baked Oatmeal Recipe

Hectic times here! Lots of good news and good things happening in my life, which I can’t wait to share with you later.

I will start with an awesome Baked Oatmeal recipe that one of my co-workers shared with me.

I made it yesterday and it was a BIG hit! So here we go:

Baked Oatmeal

Prep Time: 15 minutes

Cook Time: 45 minutes

Total Time: 1 hour

Yield: 12 servings

Calories per serving: 155

Baked Oatmeal

Ingredients

  • 3 cups dry oats (I used Giant old fashioned oats)
  • 1 cup almond milk (I used Silk Vanilla)
  • 2 very ripe bananas, mashed
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 1 cup dried cranberries
  • 1/4 cup brown sugar
  • 1 tbsp flaxseeds

Instructions

  1. Preheat oven to 350F
  2. Mix dry ingredients until well combined.
  3. Add the rest of the ingredients to the dry mix.
  4. Mix well.
  5. Spray a 9x13" pan with a non-stick spray.
  6. Pour the mix into the pan.
  7. Bake for 45-60 minutes.
  8. Enjoy!
