Hectic times here! Lots of good news and good things happening in my life, which I can’t wait to share with you later.
I will start with an awesome Baked Oatmeal recipe that one of my co-workers shared with me.
I made it yesterday and it was a BIG hit! So here we go:
Baked Oatmeal
Ingredients
- 3 cups dry oats (I used Giant old fashioned oats)
- 1 cup almond milk (I used Silk Vanilla)
- 2 very ripe bananas, mashed
- 2 eggs
- 1 tsp vanilla extract
- 2 tsp baking powder
- 1/2 tsp salt
- 1 1/2 tsp cinnamon
- 1 cup dried cranberries
- 1/4 cup brown sugar
- 1 tbsp flaxseeds
Instructions
- Preheat oven to 350F
- Mix dry ingredients until well combined.
- Add the rest of the ingredients to the dry mix.
- Mix well.
- Spray a 9x13" pan with a non-stick spray.
- Pour the mix into the pan.
- Bake for 45-60 minutes.
- Enjoy!
