I had a wonderful dinner last night with my step-son Simon (17). My husband had to take my step-daughter to her ballet class, and they were planning on having dinner together afterwords, so it was just Simon and me. We didn’t have much in the fridge…but we did have a wonderful, quick and healthy dinner in the freezer – snow crab! It is soooo easy and quick to make and so good for you, so I decided – crab it is.
Just throw the crab into a pot of water, bring to boil, boil for 5-7 minutes, drain and serve with some melted butter.
I didn’t have a chance to take a picture, so the one below is borrowed from www.seafoodblog.net:
With a dinner like that one thing to remember is that you should go easy on the butter – because this is where most of the calories will come from.
My healthy breakfast idea this morning came from a wonderful blog I discovered a while ago – www.fannetasticfood.com. Anne and her blog have been such an inspiration for me! Anne is a registered dietitian in DC area and her blog has just a ton of recipes, healthy tips and ideas.
I have borrowed this recipe from her, and here is the link to her original post.
My only modification to Anne’s recipe was that I used strawberries:
I used:
1/2 cup of cottage cheese
1/2 banana
1/2 tsp cinnamon
2 big strawberries
1 tbs almonds
Here’s the calorie count:
Enjoy and stay healthy!
Thank you for the kind words about my blog! I’m honored to hear I inspired. 🙂
Anne! Good to see you here. You did inspire a blogger in me, and a healthier person. Thank you!
