Today, I’m cooking with Mezzetta as part of the Mezzetta Memories campaign.
With another big holiday upon us, it’s time to start thinking about the holiday menu already!
Together with Mezzetta I’m sharing my family traditions when it comes to holiday cooking.
Of course, me growing up in a different country means we had different food 🙂 Nothing wild – just a little different. Having moved to the US we started our own traditions in our family. Part of that tradition is pasta salad, which I have never ever made back in Russia, but once I tried it in the US – I fell in love with it. Other than me being Italian at heart, I love making pasta salad because this dish lets you experiment – the list of ingredients is not carved in stone – you can add as much of your favorite foods to it as you want. Besides, if you have pasta at home and not entirely empty fridge and pantry, I’ll bet you can throw together a pasta salad in no time! And think how much fun it is to make it with your kids – have them suggest their ingredients to go into the salad (if you’re not opposed to pasta salad with Fruit Loops that is 🙂 )
Anyway, jokes aside – I give you….
Mezzetta Memories: Salami Pasta Salad
INGREDIENTS:
- 2 cups (uncooked) Pasta of choice – cooked according to package instructions.
- 10 Mezzetta martini olives, sliced
- 2 tbsp. Mezzetta capers, drained
- 5-6 Mezzetta cocktail onions, quartered
- Hard salami, sliced
- 1 cup crumbled feta cheese
- Juice of one lemon
- 3 tbsp. Olive oil
- 1 tbsp. dried basil leaves
- Salt and pepper to taste
INSTRUCTIONS:
Cook and drain pasta according to package instructions.
While pasta is cooking, prepare the dressing by combining lemon juice, olive oil and basil. Set aside.
Slice and cut vegetables and salami.
Combine vegetables, feta cheese and pasta in a large salad bowl.
Season with salt and pepper.
Pour dressing over the salad.
Mix until well coated.
Enjoy warm or cold.

My favorite Christmas food activity was always decorating sugar cookies. We would color the frosting and put way too many sprinkles on. The cookies were ugly but they tasted good!
