Hello, friends and good Friday morning to you.
Yesterday was another “new” breakfast morning for me. Being definitely tired of the usual fruit salad, I have gone all creative. With what we had in the fridge, here’s the breakfast I came up with: Open face egg-provolone cheese sandwich.
It is extremely easy to make:
- Toast a piece of sour dough bread in the toaster and spread some margarine on top while it is still warm.
- Fry an egg (sprinkle some salt and pepper on top).
- Put the fried egg on top of the bread and cover with a slice of provolone cheese.
- Let it cool down a little and cheese to melt.
Told you it was easy 🙂
Lunch:
With work provided lunches (that salad lasted for 2 days of lunches – it was a huge portion!), I didn’t have a chance to eat the wonderful steak and scalloped potatoes my husband made a couple nights before. I had to go home for lunch today as I had some documents I needed to print on my color printer at home, so it was nice to have lunch at home, too:
For my morning snack I cut up some strawberries and a banana, and added some blueberries on top:
Mmmmm…delicious and healthy!
Another find on the healthy snack front today was MET-Rx Protein Bar. I couldn’t eat the whole thing, but did have a half of it. It was delicious!
Really wanted to go for a run last night with my hubby, but my knee/hamstring injury started bothering me again – it got all swollen and sore, I am actually thinking about cancelling my spinning class this Saturday and just do some yoga for the next few days…
Since our running plans did’t work out,  we went to Applebee’s for dinner instead. I had their wonderful Three-Cheese Chicken Penne:
Of course there was no way I could eat all of it, but I still enjoyed almost half! Hubs had to eat the rest 🙂
