Sweet Potato Breakfast Skillet

Hi guys! How was your weekend?

Mine was great ๐Ÿ™‚ Hubby and I tried a new workout this Saturday – Les Mills Bodypumpโ„ข. Our Y just introduced those to the schedule and I was very curious to try it as I’d heard a lot of raving about it from my friends all over the place.

It didn’t disappoint! (I’m still sore)

It’s basically weight training (not cardio) done in a group ex. setting with instructor’s guidance. I loved it! Once my muscles heal, I’ll definitely be going back ๐Ÿ™‚

Now on to our normal Tuesday activity – Tasty Tuesday Linkup Party!

Today I wanted to share a very simple breakfast recipe with you. My husband requested this Sweet Potato Breakfast Skillet to be made for breakfast twice last week – that is an indication of him liking it A LOT!

So I give you our latest breakfast favorite:

Sweet Potato Breakfast Skillet

To make 2 servings of the sweet potato breakfast skillet,

YOU WILL NEED:

  • 1 medium sweet potato, cooked and cut into small cubes (you can prep this the night before to save time in the morning)
  • 2 tbsp. butter or ghee
  • 4 eggs
  • Splash of milk
  • 4-6 slices of Brie about 1×2″ each
  • Paprika, salt and pepper to taste

INSTRUCTIONS:

  1. Heat butter in a large skillet, add sweet potatoes and sautรฉ until they start to brown.
  2. Meanwhile, whisk eggs, milk and spices in a bowl. You can also skip milk and just crack the eggs over potatoes when they’re done (as shown in image above), and top with spices. Otherwise:
  3. When potatoes are done, pour egg mixture over them.
  4. You can either bake this in the oven or cover and finish cooking it on the stove.
  5. It takes about 10-15 minutes at 350ยฐF in the oven, or 5-7 minutes over medium heat on the stove.
  6. Either way – add Brie slices on top couple minutes before they’re done and let the cheese melt.
  7. Serve and devour!

This sweet potato breakfast skillet recipe is perfect for utilizing those leftover sweet potatoes you have in the fridge. If you have some that are about to go bad, cook them, cut in cubes and freeze to use in this recipe later.

  2. This looks awesomely delicious! I plan to try it. I love potato hash but on this weight loss challenge I have to pull back on the white stuff. Sweet potatoes sounds like a delish option. I can boil them to soften and peel them and then cube them for this dish. Great idea – thanks!

    • I actually had just the whites leftover from something I cooked last week, and made this with just whites. Was just as delicious ๐Ÿ™‚ Must be the sweet potatoes – they make everything better ๐Ÿ™‚
