Single Serving Sweet Potato Casseroles

The truth is – these sweet potato casseroles are our new family favorite. If you’re making something that requires some time to cook for dinner – start these first and they will be ready by the time you’re done with the main dish.

To serve 4 you will need:

  • 4 good size sweet potatoes, peeled and cut into approximately 1 inch cubes
  • About 1/2 cup walnuts, coarsely chopped and roasted (no oil added, just a hot skillet)
  • 4 tbsp. brown sugar (optional)
  • 1/2 cup milk or almond milk, or coconut milk (whichever you prefer)
  • 3 tbsp. butter or Ghee
  • 1 egg

INSTRUCTIONS:

Roast walnuts on a hot skillet (without any oil or butter) until browned.

Boil sweet potatoes until they are soft to pierce with a fork.

Preheat oven to 350ยฐF.

Drain water from potatoes, add butter, eggย and milk of your choice and immediately mash the potatoes.

Divide the mashed potatoes between 4 ramekins.

Add brown sugar (optional) and walnuts on top of every serving.

Bake in the oven for 30-40 minutes or until the potatoes start to “bubble”.

Enjoy warm!

I’m going to try hosting again this year (I think I may be one of five people in the Netherlands celebrating, but I love Thanksgiving too much not to try recreating it!).
