So “Breakfast/Snack” category winner is…..

Eggs + Sweet Potatoes + Fruit

This has been my “go to” breakfast for a while now. I’ve been changing up hard boiled/fried/scrambled eggs and the types of fruit or making my Sweet Potato Breakfast Skillet (without cheese, it’s Whole30, baby).

Grilled Everything!

My husband is the grill master. With the weather being so nice here lately, we’ve been grilling almost every night and eating out on our patio:

“Lazy Wife” category winner is…

Roasted Vegetables

My laziness knows no boundaries. None. This past week I’ve been so lazy that I roasted a whole bunch of veggies on the weekend and used them as a side for dinners and lunches during the week.

How? SUPER easy. Coat in olive oil and spices, roast at 400°F for 40 minutes, flip ’em over after 20 minutes.

Super Delicious Baked Trout

So last week I came up with the simplest and THE most delicious way to cook rainbow trout. Here it is.

2 fillets, 1 clove garlic shredded (!) on top, 5-6 fresh basil leaves coarsely chopped on top, bake in the oven for 15 minutes at 350ºF. BOOM! Prepare to be amazed when you eat it. It’s REALLY good. Like “leave none for your children as if you never made it” kinda good. 🙂

  5. I’m all about trying that fish recipe! YUM! And, I totally do the same thing with roasted veggies. Except I don’t share the leftovers. I portion them into containers for my lunches during the week. Yes, it’s true – I’m a veggie hog. 😉
