Hello, friends!
I hope you had a wonderful weekend and managed to stay fit and not overeat in this time of barbecues and other food fests 🙂
My weekend was very relaxing – with a lot of time spent by the pool with my family  (well, it’s that time of year!)
On Friday night we had another masterpiece of my husband’s grilling:
What you see above is barbecue pork ribs and grilled veggies (acorn squash, onions and potatoes with mixed spices).
After dinner we hit the DQ for dessert. I had their mini Strawberry CheeseQuake blizzard.
Oh my guilty pleasure….of course I had to pay for it next morning 🙂
Saturday morning was the weekly double time – spinning and yoga – both taught by Jim this week. I did pretty well and my knee did not bother me at all – before, during or after (YEY!)
11 miles before breakfast and some yoga stretches to follow – now that’s a dream Saturday morning 🙂
I got home tired and starving, and made myself some omelette with mushrooms, spinach and cheese:
The great thing about this meal was that I used spinach I grew in my garden!
After lunch Carmen and I went to the pool, and our boys went shopping for clothes for Simon’s trip to California next morning.
Carmen and I had a lot of fun in the pool and just chilling in the sun. This girl is a ball of fire 🙂 Especially if you give her a phone that can take pictures:
On Saturday night we decided to make dinner as quick and easy as possible – so hamburgers it was! I don’t know what my problem is, but any meal of hamburgers makes me want to make it healthier. So as usual I put together a veggie/cheese platter to go with/on it.
Carmen has recently become obsesses with Kraft Raspberry Vinaigrette salad dressing.
So we got her some and she came up with a salad recipe to put it on to go with our dinner. Like any 10-year-old she is not really into veggies and salads, but she surely liked this dressing and the salad that she invented:
What’s in the salad: Chinese style barbecue chicken, spring mix of greens (arugula, baby lettuce, baby spinach), goat cheese, baby carrots (thinly sliced).
We also got some good kitty time this weekend – he was on fire!
