Grilling is King + Mini Strawberry Tart Recipe

Happy Friday, friends!

I am so happy this work week is almost over – it has been mad busy at work these last 4 days. As my husband says – it is not a short work week, it is 5 working days’ worth of work jammed into 4. I couldn’t agree more!

Last night was my “take a break from exercise” night. We were planning on going out to play tennis, but by the time we made and ate dinner, we were both so tired that we decided to just take it easy.

Dinner was great! One of the ten million reasons I love summer is grilling. I love grilled food! And every summer my husband is just grilling away 🙂

Last night he made Grilled Barbecue Chicken (boneless skinless chicken thighs with spices and barbecue sauce):

Those were SO delicious and went well with Sweet Potato and Quinoa Salad

For dessert, my husband made Mini Strawberry Tarts.

Just cut up some fresh strawberries, soak them in a little bit of sugar and white wine, then put them on top of a dessert shell (we used soft dessert shells from Giant), add some whipped cream on top, and you have a light summer dessert, which is easy and quick to make.

Snack idea of the day today is Snyder’s of Hanover Butter Snaps Pretzels. I just can’t get enough of those these days.
