So. Since it that time of year, I’m sharing another soup recipe with you today – Italian Wedding Soup Recipe is on the menu today π
This one is one of my favorites, too – very filling and light at the same time. Doesn’t take a whole lot of time to make it, either. Here we go:
Italian Wedding Soup Recipe
INGREDIENTS
For the meat balls:
- 1/2 lb lean ground beef
- 1 egg, lightly beaten
- 1/4 yellow onion, finely chopped
- 2 tbs plain bread crumbs
- 1 tbs parmesan cheese (grated or crumbs)
- 1 tsp dried basil
For the soup:
- 2 cups chicken broth (I used the chicken broth I’m saving from when I make crock pot chicken – holly yum!)
- 3 1/2 cups water
- 1/2 yellow onion
- 2 cups coarsely chopped bock choy
- 1/2 cup uncooked Orzo (if you like your soup thicker, add 1 cup orzo)
- 2 tbs olive oil
- 1 medium carrot, finely chopped
INSTRUCTIONS:
- In a medium bawl combine the ingredients for meatballs, mix well. Shape into 1/2 inch meat balls, set aside.
- In a large pot, bring broth to boil, stir in orzo andΒ meatballs. Return to boil then reduce heat to medium.
- Meanwhile, heat olive oil in a small pan, add onion and carrots, sautΓ© for 2-3 minutes.
- Add onions and carrots to the pot.
- Cook on medium heat for a total of about 10 minutes or until Orzo is al dante.
- Take off the heat, add bok choy to the pot.
- Enjoy!

How easy was that, guys? Super easy – prep time 10 minutes and cook time about 30 minutes all in all. Dinner in 40 minutes? Yes please, for this busy wife π

Yum! Wedding soup is one of my favorites. I like to make the mini meatballs ahead of time and freeze them for whenever I’m craving this soup.
