Leftover Turkey Soup Recipe and Tasty Tuesday Linkup 43

Hey guys!

Happy Thanksgiving! I hope you had a nice holiday.

We ran/walked the Turkey Trot on the Thanksgiving morning:

And then we got home, put the turkey in the oven and snuggled with the kitty for a bit:

Our turkeyΒ was 15lb, but this year it was just the two of us on Thanksgiving, so we had plenty of leftovers!

Since ’tis the season of soups, and our bodies were begging for something lighter after the Thanksgiving feast, I made soup.

But! Before I could make soup – I made turkey broth. The wise and awesome friend of mine named Jennifer had an awesome idea which I used to make my broth. Check it out here – I promise, you’ll never use store bought broth again!

See? I told you that girl was genius!

So, back to the soup recipe. This one is super easy and quick to make, as most of my recipes.

Leftover Turkey Soup Recipe

INGREDIENTS:

  • 2 cups leftover turkey (cooked), shredded or cubed.
  • 2 medium potatoes, cubed
  • 2 cups egg noodles
  • 1 celery stock, chopped
  • 1 medium carrot, chopped
  • 1 medium onion, chopped
  • 1 can corn or green peas (whichever you prefer)
  • 2 tbsp. olive oil
  • 1 tsp dried thyme
  • 4 cups turkey broth (I actually used 3 cups turkey and 1 cup chicken broth because that’s what I had on hand).
  • 3 cups water
  • Salt and pepper to taste

INSTRUCTIONS:

Pour broth and water into a big pot and bring to boil.

Add noodles and cook until they’re almost ready (3-4 minutes before readiness)

While noodles are cooking, heat olive oil in a sauce pan, add onion and carrots, salt and pepper,Β and sautΓ© for 2-3 minutes. Set aside.

Add turkey, peas or corn, celery and thyme to the pot. Cook for 2-3 minutes.

Transfer onions and carrots from the pan to the pot.

Turn the heat off, but leave the pot on the stove and add potatoes.

Let sit on the stoveΒ for at least 20-30 minutes before serving so that potatoes are cooked perfectly.

    • We had a little bit of snow accumulate the day before Thanksgiving, but it’s gone now as it rained pretty hard yesterday.
      We’re in for a treat of winter storm with freezing rain this afternoon πŸ™
      I miss summer!
