The Best Smoothie Recipe I’ve Ever Tried!

I hope you had a good and productive week and are ready for the weekend. I know I am!

First things first – as promised in the headline, here’s the best smoothie recipe I came up with so far. Really liked it! So here we go.

Apple Banana Watermelon Smoothie

Apple Banana Watermelon Smoothie

Ingredients

  • 1 apple
  • 1 banana (fresh or frozen)
  • 1 cup watermelon cubes
  • 1/2 cup almond milk
  • 1/2 cup fat free cottage cheese
  • 1 tbsp honey
  • 3-4 fresh mint leaves

Instructions

  1. Get the ingredients ready
  2. Cut watermelon and apple into cubes, add to blender.
  3. Cut the banana (if you're using it fresh not frozen) and add to blender. I prepared mine the night before and put it in the freezer:
  4. Add milk, cottage cheese, mint and honey to the mix.
  5. Blend well, then whip for a few seconds.

Yesterday morning, my husband successfully recreated Kimberly’s Breakfast Sandwich:

It was a busy day at work, we didn’t have the kids last night, so we decided to go out for lunch to Chinese buffet. I love this place! It puts to the test all the good habits I am trying to establish in eating – how do you not overeat having all this delicious fresh food in front of you, right? I Β still had a big filling meal, but I tried to make smart choices as to what I ate.

The wonderful part of it was the sushi chef – she made me 2 flowers out of napkins πŸ™‚ I took a picture with the fortune cookie quote I got last night.

We were planning to go to the pool after dinner, but the Weather Center issued a tornado and severe thunderstorm warning, so we decided to stay at home and spend a quiet evening together.

While it was still light outside, I took some pictures of my garden to share with you guys.

Mint, mint, mint

I love mint! Last year my neighbor gave me a small plant and this year it completely took over one of the vegetable beds in my garden. I use a lot of mint in the summer time, and also freeze a lot of it for winter in small zip lock bags. Open it in winter – it’s as good as fresh!

Fitness front? Oh, there was no fitness last night – just Chinese buffet πŸ™‚ πŸ™‚ πŸ™‚
